Chocolate Zucchini Cake

Serves: 12 servings
Ingredients
  • 2-1/2 cups flour
  • ½ cup cocoa powder
  • 2-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ¾ cup butter
  • 2 cups sugar
  • 3 eggs
  • 2-1/2 tsp grated orange zest
  • 2 tsp vanilla
  • 2 cups grated zucchini
  • ½ cup milk
  • ¾ cup icing sugar
  • 1 tbsp orange juice
Instructions
  1. Preheat oven to 350°F.
  2. In a large bowl, combine flour, cocoa powder, baking powder, baking soda, salt and cinnamon.
  3. In another large bowl, cream together butter and sugar. Beat in eggs one at a time. Add in 2 tsp orange zest, vanilla and zucchini. Stir until combined. Stir in dry ingredients.
  4. Pour into greased bundt pan and bake for 50 to 60 minutes, or until a toothpick inserted comes out clean.
  5. Whisk together icing sugar, orange juice and remaining orange zest. Pour over warm cake.
