Lentil Soup

Serves: 4 servings
Ingredients
  • 1 tsp olive oil
  • 1 onion, diced
  • 1 carrot, sliced
  • 4 cups chicken or vegetable broth
  • 1 cup dry lentils
  • ¼ tsp dried thyme
  • 2 bay leaves
  • ¼ tsp Pepper
  • dash of salt
  • 1 tbsp lemon juice
Instructions
  1. In a large pot, sauté the onions and carrots in olive oil for 3-5 minutes until the onions are soft .
  2. Rinse the lentils in a colander.
  3. Add the broth, lentils, thyme, bay leaves, pepper and salt.
  4. Reduce heat to a simmer. Cover and cook for 45 minutes or until lentils are soft.
  5. Remove bay leaves, stir in lemon juice and adjust seasonings before serving.
