Double Chocolate Chip Mint Cookies

Serves: 4-5 dozen
- 1 cup butter, softened
- ¾ cup packed brown sugar
- ½ cup granulated sugar
- 1 egg
- 1 tsp mint extract
- 1⅔ cup flour
- ⅓ cup cocoa
- 1 tsp baking soda
- ½ tsp salt
- 1 package (250g) dark chocolate chips
- Preheat the oven to 375F
- In a large bowl, cream together the butter, brown sugar and granulated sugar.
- Beat in egg and mint extract.
- In a medium bowl, mix together flour, cocoa, baking soda and salt.
- Beat dry mixture into creamed mixture.
- Stir in chocolate chips.
- Drop small balls of dough onto a baking sheet.
- Bake for 8 minutes for chewy cookies or up to 10 minutes for crunchier cookies.
