Arrowroot Biscuit Squares

Serves: 25 squares
Ingredients
  • ½ cup butter
  • ½ cup brown sugar
  • ½ cup cocoa powder
  • 2 eggs
  • 30 arrowroot biscuits, broken up
Instructions
  1. Line an 8"x8" baking pan with aluminium foil and grease.
  2. In a medium saucepan, combine butter, brown sugar, cocoa powder and eggs. Cook on medium-low heat, stirring until the mixture has cooked and thickened.
  3. Add in the broken cookies and mix well to combine.
  4. Press mixture into the prepared baking pan.
  5. Cool in the fridge for at least 30 minutes to set.
  6. Add frosting if you'd like.
  7. Lift out of baking pan using the edge of the foil and cut into 25 squares.
