Serves: 12 cupcakes
  • ¾ cup flour
  • ¾ cup unsweetened cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup sugar
  • ¾ cup butter, room temperature
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup greek yogurt or sour cream
  1. Preheat oven to 350°F. Place 12 paper liners in a muffin tin.
  2. In a medium bowl, sift together flour, cocoa, baking powder and salt.
  3. In a large bowl or mixer, cream butter and sugar until light and fluffy. Add eggs one at a time, then beat in vanilla.
  4. With the mixer on low speed, alternate adding the flour mixture with the greek yogurt.
  5. Pour batter into muffin tin, filling them about ¾ full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 5 minutes and then transfer to a wire rack to cool completely.
