BBQ Chicken Pizza

Serves: 14" pizza
Ingredients
  • ½ recipe of the Best Pizza Dough
  • ⅓ to ½ cup of your favourite BBQ sauce
  • 1 cup cooked chicken breast (great use for leftover chicken!)
  • ⅔ cup shredded mozzarella cheese
  • ⅔ cup shredded cheddar cheese
  • ½ small red onion, thinly sliced (I used a white onion this time and was good too)
  • handful of fresh cilantro, chopped
Instructions
  1. Preheat the oven to 450°F. Using a flour dusted rolling pin, roll the dough out as thin as you would like. I always use our pizza stone when cooking pizza, so I just roll it out right on the stone.
  2. Spread the BBQ sauce evenly around your pizza. Sprinkle with the mozzarella and cheddar cheese, then top with the cooked chicken and sliced onion.
  3. Bake for 14-16 minutes. I like to leave mine in a little longer to make it well done.
  4. Top the hot pizza with the fresh cilantro. Slice it up and serve!
  5. Top with your favourite toppings. Bake for 14-16 minutes
  6. Makes one 14" thin crust pizza
