Cheesy Ham and Rice Bake

Now that the holidays are over, its time to get back to our regular schedule and with that comes the need for quick and easy weeknight meals. This is a great recipe for using up leftover ham and a few staples from your fridge and pantry. It isn’t the healthiest meal for New Years Resolution dieters, but pair a smaller portion with a side salad and you’ve got an easy meal.

 

What you’ll need:

  • 1-1/2 cup instant brown rice, uncooked
  • 1 can condensed cream of mushroom soup
  • 1 soup can milk
  • 1/4 cup low fat mayo
  • 120g deli ham, chopped OR 2 cups leftover cooked ham, chopped
  • 2 cups frozen peas
  • ground pepper to taste
  • 1/2 cup shredded cheddar cheese

Preheat oven to 425°F

 

Combine all ingredients except cheese in a 2-liter casserole dish, sprayed with cooking spray. Cover and bake for 20 minutes.

 

Top with cheese and continue to bake for another 10 minutes uncovered.

 

 Let stand 5 minutes before serving.

 

Deliciously creamy and full of flavour. I even froze more chopped up leftover ham to make this again in a few weeks.

 

Makes 4 servings
