Grilled Pineapple with Whipped Coconut Cream

I wasn’t kidding when I said that we’re excited about barbecue season. We’ve been grilling up our dinner almost every day this week! One night, while we already had the barbecue fired up, I decided to try grilling pineapple for a fun seasonal dessert. I’ve tried other grilled fruits, like peaches, and they’ve turned out fantastic.

Barbecuing the fruit caramelizes some of the natural sugars and gives it a slightly smokey taste. I made up some of our favourite Whipped Coconut Cream to go with it, and it was perfect for dipping the pineapple pieces.

I also brushed on a little spiced marinade before I grilled it for a little extra kick. It smelled amazing while it was grilling!

What you’ll need:

  • 1 pineapple
  • 1 lime, juiced and zested
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • whipped coconut cream
  • garnish: lime slices, coconut flakes, lime zest
Cut off the top of the pineapple.
Cut off the bottom.
 Slice the skin off.
Cut it in half length-wise.
Cut those halves in half again, so you end up with 4 quarters.
Remove the tough core strip.
Cut each quarter in three strips.

 

Combine the lime zest, juice, vanilla, cinnamon and nutmeg in a small bowl.

 

Brush on one side of the pineapple pieces.

 

On low heat, grill the pineapple pieces with the brushed side down. Brush the other side with the marinade while it cooks.

Grill on low for 4 minutes each side. Cool slightly before serving.
While the pineapple is grilling, make some Whipped Coconut Cream.

Serve pineapple pieces with Whipped Coconut Cream and garnish with lime slices, coconut flakes or lime zest.
