Southwest Chicken Rice Bake

This is one of those meals that came together using a hodge podge of leftovers from the fridge, freezer and pantry. I love it when you can pull together a delicious meal and clean out your fridge at the same time! I used a couple of BBQ chicken breasts and rice from the night before, along with frozen corn from the freezer and canned black beans and green chilies from the pantry. Toss in some fridge staples, chopped green onion and fresh avocado on the side and you’ve got yourself a yummy, nutritious meal that takes less than 30 minutes to put on the table. This was great for leftovers as well and I’m hoping to freeze a few batches of this in anticipation of the baby arriving oh so soon!

Serves: 6 servings
Ingredients
  • 3 cups diced cooked chicken (about 2 large breasts)
  • 3 cups cooked white or brown rice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1 cup salsa
  • 1 cup light sour cream or plain greek yogurt
  • ¼ cup chopped green onions
  • 1 (4 oz) can green chilies
  • pinch red pepper flakes
  • salt and pepper to taste
  • toppings: sliced avocado, cilantro and green onions
Instructions
  1. Preheat oven to 350°F.
  2. In large bowl, combine chicken, rice, beans, corn, cheddar cheese, salsa, sour cream, green onions, green chilies, red pepper flakes, salt and pepper. Stir gently until everything is mixed together.
  3. Pour mixture into a 9"x13" baking dish and sprinkle with additional cheddar cheese on top. Bake for 20 minutes or until the dish is heated through and the cheese has melted.
  4. Serve with sliced avocado, fresh cilantro and sliced green onions.

Bake for 20 minutes or until the dish is heated through and the cheese has melted.
