Don’t get me wrong, I love the whole Easter dinner with a big ham with all the fixings, but there is also something so nice about an Easter brunch. Maybe its the array of fun breakfast foods, or being able to enjoy the beautiful sunshine after a long dark winter, but its a fun and fresh way to share a great meal with friends. Here are a few ideas of goodies that you could share with your guests this year.
How cute are these little pancake skewers? To make them, use a small spoon to scoop your favorite pancake batter into your skillet to make tiny pancakes. Stack the pancakes in groups of three, top with a blueberry and small mint leaf and pierce a small skewer through them. Drizzle thick maple syrup over each skewer. These are sure to please adults and kids alike.
My favorite dish at a brunch is quiche, or as my grandfather liked to call it, “squish”. This is a great make ahead dish that is not only easy to make, but delicious. The flavour combinations are endless, limited only by your imagination and fridge contents.
These Yogurt Parfaits are layered with blueberry yogurt, lemon yogurt, fresh berries, homemade granola and dark chocolate shavings. They look so delicious you’ll forget that they’re actually good for you.
Now Easter wouldn’t be Easter without Hot Cross Buns – the delicious sweet spiced buns with raisins or currants inside, with that signature cross marked across the top with icing, pastry or flour. They’re is a great deal of superstition surrounding these delicious baked goods, that are baked and served on Good Friday. Legend goes that sharing a hot cross bun with a friend today will ensure that you’re friendship will stay strong during the coming year. They’re also said to have medicinal purposes and protect ships during voyage. Whatever the case may be, they are a delicious seasonal baked good to share with friends and family this weekend.
If you’re not in the mood to make your brunch yourself, there are always plenty of venues that host their own Easter Brunches. One of the most exciting ones in Toronto is the Royal Easter Brunch held every year at Casa Loma.
