Although I love my 108 calorie brownies, sometimes you just can’t beat the real thing. I’m talking about decadent, gooey, fudgey brownies. The kind that leaves you in a delicious chocolate haze (and has you reaching for another one ASAP!)
The secret to making these brownies extra gooey on the inside with the crunchy top is adding mini marshmallows.
But of course the most important ingredient in these brownies is CHOCOLATE! Lots and lots of delicious chocolate. I need more of this in my life. Stat.
What you’ll need:
1 stick of Unsalted Butter
3 squares of Baking Chocolate (I used 2 Semi-Sweet and 1 Dark Chocolate), chopped
2 cups of Sugar
4 Eggs
1 cup Flour
1 tsp Vanilla Extract
1 cup Semi-Sweet Chocolate Chips
2 cups Mini Marshmallows
Preheat oven to 350°F
Melt chocolate and butter in a microwave safe bowl or in a small saucepan over low heat, stirring constantly.
Add chocolate and butter mixture to a large bowl, along with the sugar and vanilla. Beat for 2-3 minutes until fluffy.
Add in eggs one at a time and continue beating. Add in flour and stir until just combined.
Fold in chocolate chips. Don’t forget to sneak a few for yourself from the bag while you’re at it 😉
Fold in mini marshmallows. And steal a few of those too 😉
Pour mixture into a greased 9 x 13 baking dish. I like to take the wrapper from the stick of butter I used earlier and just rub it all over the inside of the pan.
Bake for 35-45 or until just done. You don’t want to over cook it because you want the inside to stay fudgey and gooey and awesome.
Let the pan completely cool before you cut them. I may or may not have scooped some out of the pan while they were still warm and added them to vanilla ice cream. Yum!
