With all the great summer produce that is still showing up at farmer’s markets, there is plenty of zucchinis out there just looking to be made into something delicious. And what better than adding it to some chocolatey goodness!
With the Toronto International Film Festival in full force right now, these muffins are perfect for me to grab in the morning on my way out the door.
Chocolate Zucchini Muffins
Ingredients
- 1-½ cups flour
- ¾ cup brown sugar
- ¼ cup cocoa
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- ½ tsp nutmeg
- 2 large eggs
- ½ cup melted butter
- ⅓ cup milk, warmed
- 2 tsp vanilla extract
- 1 cup shredded zucchini
- ¾ cup chocolate chips (mini chips work great too!)
Instructions
- Preheat oven to 375°F and line a muffin tin with 12 paper liners.
- Mix dry ingredients together and sieve if necessary.
- In a separate bowl, whisk eggs, oil, milk and vanilla. Pour over dry ingredients.
- Sprinkle zucchini and chocolate chips over top, stirring just enough to blend.
- Spoon batter into paper lined muffin tins.
- Bake for 17-20 minutes.
Notes
This recipe doubles well to make 24 muffins, or 12 muffins and 1 loaf cake.

I would like to say this isn’t a normal occurrence, but it happens all the time. I never remember to wear an apron or use a towel 🙂
