Leftover Mashed Potato Pancakes

Have leftover mashed potatoes from Christmas that you just don’t know what to do with?

 

In my family, the tradition is to mix in a few ingredients and make delicious potato pancakes.
 
For every 2-3 cups of mash potatoes that we have, we use:

  • 1 egg
  • 1 small onion
  • 2 tbsp butter

 

Dig those mashed potatoes out of the fridge.

 

Finely chop up some onion.

 

Melt some butter in a large frying pan.

 

Saute up the onions in the butter until soft.

 

Sprinkle in some salt and pepper to taste.

 

Beat a few eggs in a bowl.

 

Add the egg to the potatoes.

 

Toss the onions in the mixture and give it all a stir to combine.

 

Using your hands, form small patties (about the size of a hamburger) and add to the frying pan. Cook until browned on one side and then flip and cook the other side.

 

Serve the pancakes hot with your favorite condiments: ketchup, salsa, sour cream, leftover chili, gravy, whatever you like. They are just as good plain!

 

We actually cook up extra potatoes whenever we make them just to be able to make these the next morning.
