Its been a very busy Summer and most nights the thought of making a big elaborate dinner is just too much. I want food and I want it fast. Usually I’m looking for something to fill three requirements: 1) Protein 2) Lots of Veggies 3) Tastes Good.

These quick and easy Zucchini Lasagna Bowls fit all three requirements. Of course I would rather have real Zucchini Lasagna, or even better my Great Aunt’s Lasagna, but this is a nice quick consolation prize. It tasted good and gave into my Italian food craving.

I made a quick meat sauce using cooked ground beef, jarred sauce and a big handful of fresh herbs from my little kitchen herb garden. I let it simmer for a while and to get all the flavours coming together.

Meanwhile I sliced up a zucchini and threw it into a pot of salted boiling water. Once the slices started to get a little softer, I drained them.

To make the lasagna bowl, I layered zucchini, then cottage cheese (you could use ricotta) and then finally some of the pasta sauce. Garrett added a ton of Parmesan on top of his too. It was delish!
