Now that the cooler weather is here, I like to get out as much as I can to enjoy the changing of the season. This week I was asked to help out with an environmental awareness event and I jumped at the chance to spend a morning on the river. The birds were all out (probably getting ready to fly to Florida) and many people were eagerly heading out in canoes to enjoy the last days of the season.
There were even a few paddle-boarders heading out on the water too. I’ve only seen celebrities on these things in magazines at the grocery store, so it was very interesting to see them in person. Maybe next year I’ll even rent one out to give it a whirl.
At the end of the event, all the participants were allowed to take home some local apples to enjoy.
As one of the volunteers I was offered a half a bushel of apples to take home myself. Very exciting for an apple lover like me, but now I need to make some apple things to use them all up!
This morning I made a Baked Apple Breakfast Bowl and it tasted amazing! Between the warm apple, toasted oatmeal and creamy Greek yogurt, it tasted more like a dessert than breakfast. Delish!
First I toasted a couple of tablespoons of oatmeal in a small skillet with a little bit of butter, until golden and crisp.
Then I scooped some of my favourite plain Greek yogurt into a bowl and sweetened it with a bit of real maple syrup.
To bake the apple, I thinly sliced it, sprinkled on some cinnamon and then popped it in the microwave for a minute. In no time at all I had hot, sweet baked apple!
Then its just a matter of pouring the baked apple over the yogurt and sprinkling the toasted oats on top. This was such a great way to start a Sunday morning, but just as quick to make on a weekday morning too.
I’m hoping to get a chance to use some more of the apples to make some Apple Cranberry Bread this week. The warm sweet and tart bread would be the perfect Sunday afternoon treat.
