Kisses Chocolate Chip Cookies

Usually it is tradition for my sister and me to have a Bake Off for the Guy Fawkes Bonfire Party, but unfortunately she wasn’t able to come home this year. She is our superstar law student these days and that doesn’t give her much time off. It didn’t feel the same without her there, but I still had to bake up some goodies for the masses.

I found this great recipe for Kisses Chocolate Chip Cookies on the Hershey website and thankfully they made quite a few to feed a crowd (along with the other great desserts brought).

The outside tasted more like a chocolate chip shortbread than a traditional chocolate chip cookie. They tasted great and were an easy finger food (or mittens food for those out at the bonfire).

My favourite part was the Mini Hershey Kisses inside. I loooove chocolate! 

48 Chipits Mini Kisses Milk Chocolate Baking Pieces (or more as needed)
1 cup Butter
1/3 cup Granulated Sugar
1/3 cup packed Brown Sugar
1 tsp Vanilla Extract
2 cups All-Purpose Flour
1 cup Mini Semi-Sweet Chocolate Chips

Preheat the oven to 375°F.

Cream together the butter, sugar, brown sugar and vanilla in a large bowl until well blended. Add flour to butter mixture and blend until smooth. Stir in mini chocolate chips.

 Mold scant tablespoons of dough around each chocolate baking piece, covering completely.

Shape into balls and place on ungreased baking sheets.

Bake for 10 to 12 minutes or until set and golden on the bottom. 

Cool slightly and remove from baking sheets to a rack; cool completely.

On the Hershey website they suggested making a garnish with Chocolate Drizzle and I absolutely would have if there’d been more time. 

Chocolate Drizzle: Place 1/4 cup Semi-Sweet Mini Chocolate Chips and 1 tsp shortening in a microwave-safe bowl. Microwave on medium for 30 seconds; stir. If necessary, microwave for an additional 10 seconds, stirring after each interval, until chocolate is melted and smooth. 

Makes about 4 dozen cookies.
