I love my crockpot. Especially on crazy weekdays when the last thing that I want to do is cook. The 10 minutes it takes to prepare the ingredients the morning off, is well worth it when you get home.
One of my favourite things I like to do with the crockpot, is cook up flavourful pull-apart chicken. You can change up the flavour to whatever you like and it’s easy to add it to salads, burritos, pasta dishes, wraps and sandwiches.
What you’ll need:
Boneless Skinless Chicken (I used 6 frozen ones)
1L of Chicken Broth
Your Favourite Seasonings (I used Onion Powder, Garlic Powder and Cajun Seasoning)
Place the chicken breasts in the bottom of your crockpot. Its okay if they’re frozen.
Pour the chicken broth over the chicken until they’re covered. A few spots of mine we’re peeking out, but they’ll be fine, but try to submerge most of it.
Sprinkle in your favourite seasonings. I used a combination of onion powder, garlic powder and cajun seasoning.
Remove the chicken from the crockpot with a slotted spoon and shred with a fork.
We had ours in Homemade Chipotle Burrito Bowls, with spiced black beans, Cauliflower Rice, lettuce, sour cream, guacamole, cheese and salsa.
The leftovers are also great on salads or mix with some BBQ sauce for pulled-chicken sandwiches.

That Cajun Seasoning is my new favorite! I put a little bit in just about everything lately. Brownies? Cajun em up! OK, maybe not the brownies..

Brownies would definitely be interested. Mind you, anything with chocolate sounds good right about now.
I have even started putting cajun seasoning mixed in with frozen veggies for an easy side dish. Toss some of the shredded chicken in there too and you can have “stirfry” in about 4 minutes. These are the kinds of easy dinners we plan for nights when we get back late from the gym and the last thing you want to do is cook.
