Chocolate Covered Banana Freezer Bites

Whenever we have a few extra bananas that just can’t get eaten up, I go to my go-to “banana-user-upper-recipes”: Banana Chocolate Chip Cake, Whole Wheat Stevia Banana Bread, Banana Bars with Maple Cream Cheese Icing or Nut-free Egg-free Banana Bread.

But what do you do when it is roasting outside and you refuse to even run hot water, let alone turn on the oven.

You turn them into a sweet treat that not only uses up the banana, but also helps cool you down. It also helps that it has chocolate involved too.

 

The outside is crispy chocolate, while the inside is like a piece of frozen banana ice cream. They make for a nice treat when you’re looking for a little something cold and sweet.

What you’ll need:

  • 2 ripe bananas, cut into slices
  • 1-1/2 cup semi-sweet chocolate chips or chunks
  • 3 tsp coconut oil
  • optional toppings: coconut, sprinkles, nuts

 

Slice the bananas into 1/2 – 1 inch pieces and lay the discs on a baking sheet lined with parchment. (Make sure that you have room in your freezer…I had to move a few things around in there to make this fit!)

 

Melt the chocolate in a microwave safe bowl in 30 second intervals until melted. Stir in the coconut oil.

 

Dip the banana discs into the chocolate on a fork. Run the fork tines along the edge of the bowl to remove the excess on the bottom.

 

Place the dipped banana discs back onto the parchment paper.
To push the discs off the fork, I used a knife. It makes edges a little neater.
You can also sprinkle coconut, sprinkles or nuts on the top of the banana discs.

Place the baking sheet into the freezer for at least 4 hours or overnight….if you can wait that long!

 

I’ve already got another bunch of bananas getting ripe on the counter just so that I can make these again!

    Oh man…these are a ‘gotta try that’ recipe! 100F today and my guys are home all day, looking in the fridge for some kinda sweet treat to ‘magically appear’…ha! Oh yeah, and we have some elderly bananas sitting on the counter! Thanks for sharing 🙂
