French Onion Soup

Despite all my wishful thinking that Spring will arrive soon, it is still bitterly cold here (with snow last week!!!). After a particularly chilly morning walk, I came back home and got started on a big pot of soup. Nothing can warm you up like soup, especially homemade.

And what better way to serve a hearty bowl of French Onion Soup, than with melted cheese on top of crusty bread.

Just look at it. Delicious melted cheese.
The best part is that it is even easier to make than you probably thought. The most labour intensive part is cutting the onions, and that is just because I spend most of my time wiping away onion tears. (I have seriously contemplated buying onion goggles on more than one occasion. Or maybe just use ski goggles.)


What you’ll need:

  • 6 cups yellow onions, halved and sliced
  • 6 tbsp butter
  • 2 – 900 mL (32 oz.) cartons of beef broth
  • 1 cup red wine
  • 3 bay leaves
  • 1 tbsp worcestershire sauce
  • 1 tsp of salt
  • 1 tsp of sugar
  • 1/2 tsp of dried thyme leaves
  • pepper to taste 
  • french bread, cut into rounds and toasted
  • swiss cheese, sliced

In a large pot, melt butter over medium heat. Add the onions and continue to stir until they begin to caramelize and turn a golden brown, about 10 minutes.

Add beef broth, wine, bay leaves, Worcestershire sauce, salt, sugar and thyme. Bring to a simmer and heat for about 15 minutes.

To serve, ladle soup into an oven proof bowl.

 

Top it with a slices of crusty bread and sliced swiss cheese.  You want to have as much of the surface covered as possible.

Put in the oven, under the broiler, for 1-2 minutes until the cheese becomes bubbly.  Keep an eye on it, as it can burn quickly.

Grab a big spoon and dig in. Just be careful of that melted cheese – it’ll be hot!

 

Serves 4-6
