This great weeknight dinner recipe was supposed to go up yesterday, but I’ve been on the road this week with very poor internet. It makes me realize how dependent I am on technology! I’m sitting in a fast food parking lot right now, using their wi-fi just to get this up. I’ll try to answer comments and emails as soon as I get settled in tonight.
We eat chicken breasts for dinner often, but it’s hard to find new ways to make it exciting. I can get really bored of our usual routine of grilling them with barbecue sauce, but I can’t be bothered to make something that is time consuming on a weeknight. That’s where an easy recipe like this Cheesy Baked Chicken is great to have on hand.
The cheesy flavour from the parmesan cheese combined with the creaminess of the greek yogurt makes this a delicious dish without all the calories of typical cream based sauces. We’ve already added it to our repeat list and I can see this becoming part of our rotation of favorite weeknight meals.
- 4-6 chicken breasts
- 1 cup greek yogurt
- ½ c fresh parmesan cheese, plus more for the top
- 1 tsp seasoning salt
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp oregano
- ½ tsp freshly ground black pepper
- Preheat oven to 375°F and spray the inside of a 9×13 baking dish. Lay the chicken inside in a single layer.
- In a small bowl, mix together the remaining ingredients.
- Spread the mixture evenly over each piece of chicken, being sure to cover all the exposed meat. This will prevent it from drying out.
- Sprinkle more fresh parmesan on top.
- Bake uncovered for 45 minutes.

The chicken doesn’t come out looking nice, but it smells delicious. I found that it’s slightly soupy in the bottom, but it didn’t seem to affect the cheesy topping.
I served ours up alongside an iceberg salad with buttermilk ranch dressing. It also made great leftovers for the next day.
