I’m usually the one who’s making food for other people, so it’s a real treat when I get to try something made by someone else. My sister was home from school on the weekend and was making some goodies to take to a Super Bowl party last night, and I was lucky enough to sample some before she left.
She was making this delicious Jalapeno Popper Dip and was sweet enough to make a little one for my mom and I to try while we were having a quiet Sunday afternoon of movies and wedding planning.
It was perfectly creamy and cheesy with a little bit of heat from the jalapenos. She adapted it from Simply Gourmet’s recipe to make it vegetarian.
The dip was a huge hit at her Super Bowl party last night too. She brought it along with some Seattle Seahawks cupcakes and a football bowl full of football themed chocolate treats. She really knows how to run with a theme!
She made her dip in an oval shaped casserole dish and added cheese “laces” to make it look like a football.
The cupcakes were done with the Wilton’s buttercream icing recipe, coloured with blue and green for the Seattle Seahawks and a few with green “grass” icing and football field lines.
This cute football bowl was filled with some fun chocolate treats – chocolate covered almonds with icing football laces, chocolate covered strawberries with white chocolate football laces and chocolate and peanut butter wrapped candies.
The whole party seemed to get in on the Super Bowl food fun, including this awesome stadium with guacamole grass and sour cream end zones dyed with food colouring – and cheese goal posts!
So, back to the Jalapeno Popper Dip, because I know you want to try this one….
What you’ll need:
- 2 8-oz packages of cream cheese, softened to room temperature
- 1 cup mayonnaise
- 4-6 jalapenos, chopped and seeded
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup finely chopped green onions
- 1 cup crushed crackers (such as Ritz)
- 1/2 cup parmesan cheese
- 1/2 stick butter, melted
Preheat oven to 350°F. Combine the cream cheese, mayonnaise, jalapenos, cheddar, mozzarella and green onions in a medium bowl. Stir to combine.
Transfer to an oven proof dish. My sister put hers in a football shaped dish and made an extra little one for my mom and I to try in a small pyrex dish.
Combine the crackers, parmesan and butter and sprinkle on top.
Bake for 20-30 minutes or until bubbly. Serve with your favourite crackers.
