White Chocolate Cranberry Cookies with Truvía® Baking Blend (& a Holiday Baking Giveaway!)

I love holiday baking, but sometimes the overload of sugar is just too much. Over the past year, I’ve really tried to cut down on my sugar intake and I’ve seen a huge improvement in how I feel, but I knew that it would be hard with the holidays coming up.  I try to use stevia and other natural sweeteners, but I find that you miss out on some of the other properties of sugar, besides the sweetness, like browning and texture.

Truvía-Baking-Blend
Thankfully the folks at Truvía® have come out with the new Truvía® Baking Blend that is perfect for your holiday baking. It’s a blend of the Truvía® calorie-free sweetener and sugar, with 75 percent fewer calories than sugar alone. The ratio is half a cup of Truvía® Baking Blend for every one cup of sugar you would use in a recipe. It’s great for any baking recipe that you would normally use sugar in, like quick breads, muffins, brownies, bars and cookies.

They sent me a bag of the Truvía® Baking Blend to try out myself and I made these yummy White Chocolate Cranberry Cookies to take with us on our cottage getaway this past weekend. I was able to make them ahead of time, wrap them up in the fridge and take them up to the cottage to bake fresh for all our friends. These are a great cookie to make ahead and freeze for the holidays too!
White Chocolate Cranberry Cookies with Truvía® Baking Blend

Serves: 15 regular cookies or 30 small cookies
Ingredients
  • 1-1/8 cups all-purpose flour
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ cup butter, softened (or ¼ cup butter + ¼ cup shortening)
  • ¼ cup Truvía® Baking Blend
  • ½ tsp vanilla
  • 1 large egg
  • ¾ cup white chocolate chips
  • ¾ cup dried cranberries
Instructions
  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine flour, salt and baking soda. Beat butter, Truvía® Baking Blend and vanilla in a separate large mixing bowl. Mix in egg. Gradually stir in flour mixture. Stir in white chocolate chips and dried cranberries.
  3. Drop rounded tablespoon on cookie sheets and press down to slightly flatten. Bake for 9 to 11 minutes or until lightly browned. Allow to cool on a rack.
  4. Make-Ahead Tip: Roll cookie dough into a log on a piece of wax paper. Roll up in the paper and twist the ends. Wrap in plastic wrap or in a sealable plastic freezer bag and label. It will last 3 days in the fridge or 3 months in the freezer. Thaw slightly in the fridge before slicing into discs and baking according to directions. They may take slightly longer to bake, so keep an eye on them.

    I LOVE making banana nut bread with my mom during the holidays! It’s a sweet tradition that we share together every year! 🙂 I would LOVE to win this!       This is the closest ingredient I’ve found to the consistency of sugar, without the funky after taste some sweeteners have. I’m planning to use this for lots of my baking this holiday season! If you try it, let me know what you think!

    My favourite recipe to make over the holidays would defiantly be homemade brownies 🙂 the smell goes through the entire house.

    Using truvia would be an excellent substitution to help cut back on sugar.

    I have to say my grandmas Oatmeal Date cookie recipe. Passed down for generations and is literally on a piece of paper photocopied from the original handwritten recipe. Faint and smudged just like any well used recipe should be. I love making them every holiday and they are very special to me.

    My favorite that I make every holiday is a no-bake cream cheese recipe. I have not meet a single person who doesn’t like it!
