Despite the drought that we’re having in Ontario this summer, our vegetable patch has been doing quite well! I helped my mom plant it in the back field at the farmhouse in the weeks leading up to Lucy’s arrival. Since then we’ve had radishes, lettuce, herbs and now snap peas, with many more veggies on the way.
We had a family dinner earlier this week to celebrate my nana’s birthday and it seemed like the perfect chance to play around with some of our fresh produce. I ended up making this Summer Snap Pea Pasta Salad using freshly picked snap peas, basil and parsley from the garden.
I used a combination of whole snap peas and shelled peas for a variety of texture in the salad. The leftover hulls went to the chickens to give them a nice treat too!
Summer Snap Pea Pasta Salad
Ingredients
- 8 oz dry farfalle pasta
- 2 cup snap peas, trimmed and cut in half
- 2 cups fresh or frozen field peas
- ½ cup green onion, thinly sliced
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- ¼ cup olive oil
- 2 tbsp fresh lemon juice
- 1-1/2 tsp dijon mustard
- 1 tsp honey
- 1 clove garlic, minced
- salt and pepper to taste
Instructions
- In a large pot of salted boiling water, cook pasta according to package directions. In the last three minutes, add snap peas and field peas to pasta water.
- Drain pasta and peas, and rinse in cold water. Transfer to a large bowl.
- Add green onion and herbs to pasta and toss.
- In a small bowl, whisk together remaining ingredients into a dressing, adding salt and pepper to taste.
- Pour dressing over salad and gently toss to coat. Season with more salt as needed.
