Its….Cinco de Mayo!

Buenos dias, mi amigos! Its….

I really wanted to get Whiskey a real sombero to wear tonight, but unfortunately they are about $20 (for a dog, seriously? seriously?!?!?!) so instead he got the photoshop treatment. Sorry Whisk, I know you really wanted the real thing, but maybe you can just wear your taco costume from Halloween again? 🙂

Tonight I’m having some friends over for dinner, so I got up early this morning to get started on the enchiladas that I am making. I’m going for a different method today and letting the chicken simmer in sauce inside the big crockpot all day while I’m at work. It should be all delicious and tender when I get home and then it will be time to roll it up in some tortillas and pop them in the oven. Tomorrow I’ll post about all the fun dishes I’m serving up tonight, like this Lime Cilantro Rice:

I thought it would be a fun alternative to just making spanish rice and the lime keeps it summery and fresh, which is just what the doctor ordered with this nice weather we’ve been having here in Toronto.

What am I most looking forward to? Going home to have a nice big, cold margarita 🙂 Jimmy Buffet knows what I’m talking about!
