Apple Cranberry Bread

This time of year there are two fresh fruits that I just can’t get enough of: apples and cranberries! And thats where this recipe comes in handy!

The top if crisp and golden.
While the inside if full of juicy cranberries.
And delicious chopped apple. Look at how big this apple is! I couldn’t believe it when I saw it at the farmer’s market, so of course I had to buy it.

That whole apple became more than two cups chopped up, so I had a few bits to nibble on while I waited for the bread to finish. Now on to the recipe!

 

What you’ll need:

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 tbsp canola oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen cranberries
  • 2 cups peeled, chopped apples

Preheat oven to 350°F.

In a large bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon.

In a small bowl, whisk oil, eggs and vanilla extract.

Stir wet ingredients into dry ingredients until just moistened. Fold in cranberries and apple.

 This is a thick batter, but I promise it will work out!
Pour batter into a loaf pan coated in cooking spray.
Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.

Cool for 10 minutes on a wire rack. Then remove from pan and let cool completely on wire rack.

Slice and enjoy!
I could eat this for the rest of my life. I even toasted a piece for breakfast one morning and smeared delicious butter all over it. So good as a snack too!

Makes 16 slices.
