There is nothing like the aroma of cooking with fresh herbs and I love doing it whenever I get a chance. I just can’t justify spending so much money on them and then letting them go to waste in the fridge after I’ve only made one dish with them.
Whats my solution?
Freezing them!
First I wash all the leaves and remove them from any stems. Using a sharp knife, I chop them up into small pieces.
Next, I fill each cube of an ice cube try with about 1 tbsp of chopped herb. This time I chopped up basil and oregano to put in separate containers. I also twisted up some thyme stems and froze a few cubes of that as well. Then it is just a matter of carefully filling each cube with water using a small measuring cup and then placing the trays in the freezer.
The next day, I remove the ice cubes from the trays and place them in marked freezer bags to go back into the freezer. The leaves may have turned black on the top, but this will not effect the taste.
When I’m ready to use the herbs, I just pop a cube into the simmering sauce. The minimal water will evaporate as the sauce cooks, but the delicious fresh herb taste will stay!
