Confetti Cake Mix Cookies

The other day I realized that it had been forever since I’d made cookies. I haven’t done much baking lately and I felt that poor Garrett was getting a bit deprived around here, so I took a look in the ol’ pantry to see what I had.

Staring right back at me was a box of Rainbow Chip Cake Mix which reminded me of my Cake Mix Cookie recipe. Bingo – Easy to make and delish!

We shared a few that night and the next morning I packed up the rest of them for him to take to work for snacks this week. He called me later that day to tell me that he and his colleagues had been having a miserable day and when he opened up his lunch bag he was surprised to see the big bag of cookies. He ended up sharing them with his coworkers and it made their day just a little bit brighter. Just what I like to hear!

What you’ll need:
1 box of Cake Mix
1/4 cup Oil
1/4 cup Water
1 Egg

Preheat oven to 350°F.

In a large bowl, combine all ingredients.

Drop by the spoonful on a baking sheet. Bake for 10 minutes and remove to rack to cool.

I ended up freezing a bag of these for lunches and they still stayed chewy, straight from the freezer. I love making things from scratch, but its fun to use a mix sometimes too for a quick and easy treat.
