Turkey Mini Meatloaves

Meatloaf is normally a great comfort food, but with this recipe it is also a healthy one. Using lean ground turkey and whole oats as a base, these little mini meatloaves are loaded with flavour and are an easy weeknight meal. Plus they come perfectly portioned! They also were great in a pita sandwich the next day for lunch.

For dinner, I served them up alongside Baked Zucchini Fries from Two Peas in Their Pod. This healthy comfort food is definitely a keeper and I’ll be making it again, hopefully soon!

 What you’ll need:
1 lb Ground Turkey
1/2 cup Oats
2 tbsp Milk
1 Egg
2 dashes of Worchestershire Sauce
1 tsp Oregano
1 tsp Basil
1 tsp Cayenne
1 tsp Garlic Powder
1 tsp Onion Powder
Salt & Pepper

For the Sauce:
1/3 cup BBQ Sauce
1 tsp Mustard
1 tsp Maple Syrup
1 tsp Hot Sauce

Preheat oven to 350°F.

 In a large bowl, combine oats, milk, egg, worchestershire sauce and spices until well mixed.

 Add ground turkey into bowl and stir until combined.

 In a small bowl, mix together sauce ingredients.

In a greased muffin tin, scoop spoonfuls of turkey mixture evenly into eight muffin cups. press until slightly rounded. Spoon sauce mixture over top of each cup.

Bake for 25-30 minutes or until the internal temperatures reaches 180°F. Allow to cool for 5 minutes before removing.

I served them alongside Baked Zucchini Fries from Two Peas in Their Pod.
