Southern Style Biscuits

Last night I went to go visit my parents and get my snow tires put on. Garrett and I decided to stay for dinner…especially when we heard what my mom was making – roast chicken with all the fixin’s, including these homemade biscuits.

Using a recipe she found online, she gave these self-rising biscuits a try. They didn’t rise up as much as she’d have liked, but they still tasted great. Especially with some butter!

What you’ll need:

2 cups Self-Rising Flour
¼ cup Shortening
1 cup Milk or Buttermilk
Preheat the oven to 400°F.

In a large bowl, cut the shortening into the flour using a pastry cutter on your fingers. It should look like the texture of cornmeal. Form a well in the middle of the flour mixture and pour the milk or buttermilk in the well. Use a fork to stir the flour in the milk, being careful not to overwork the dough.
Roll out the dough to 1/2 inch.
Cut out biscuits with a 2 inch cutter. My mother used my great grandmother’s biscuit cutter (aka an old soup can).

Place biscuits on a greased baking sheet and bake for 10-12 minutes.

They were crisp on the outside and warm on the inside. Perfect for spliting open and spreading some butter on. I even grabbed the last one to take home and have with jam on it this morning. Its was delish!

Another freshly baked treat my mom made us was my Nana’s apple crisp recipe, which I hope to share with you guys soon. Its the perfect combination of crispy toated oats and carmelized apples.

It was quite a delicious treat for a Wednesday night!
