Breakfast Quinoa

I love breakfast. I know that there are some people that can’t get up and eat first thing in the morning, but I’ve never had this problem. Some days I want savoury, most days I want sweet, but guaranteed I’m going to eat something – even if its just cold leftover pizza straight from the fridge.

To keep things interesting, I like to look up new breakfast ideas. Something a little different from your standard cereal, eggs and toast route. How about quinoa for breakfast? I usually use it in savoury side dishes or as part of a salad, but it also makes a great high protein breakfast grain. Its prepared similarly to oatmeal but with a much different taste and texture.

This is an easy recipe that makes two servings. Either you can share it with your significant other, or save some to reheat for the next day. Its a nice break from traditional breakfast fare.

What you’ll need:
2 cups Milk
1 cup Quinoa, rinsed
3 tbsp Brown Sugar
1/8 tsp Cinnamon
Toppings (Berries, Maple Syrup, Granola, more Milk, Cinnamon or Brown Sugar)

In a small saucepan, bring milk to a boil.

Add in quinoa and return to a boil. Reduce heat to low and simmer, covered for 15 minutes or until about 3/4 of the milk is absorbed.

Stir in sugar and cinnamon. Cover and continue to cook for about 8 minutes or until almost all the milk has been absorbed.

Serve with your favourite toppings: berries, maple syrup, granola, more milk, cinnamon or brown sugar.

    perhaps it should be 3 teaspoons?! 3 tbsps turned it brown and way too sweet!!!!!!!

      Try using coconut sugar and cinnamon, organic raisins.
      I make it all the time.
      I also make my own coconut milk and use it in place of regular milk which is not healthy for you.
      I tried it the first time with almond milk but coconut milk I s wayyyy better

    Really yummy! I only made half the recipe for me and the hubs, but I think I’m ’bout to make more! Oh, and I added chopped walnuts. I also like that you can make this ahead and eat later…unlike oatmeal, which turns into a brick.

    Sadly, this was an epic fail for me. The pot overflowed when I covered it (set as low as my stove can go). I cooked it uncovered, the milk curdled and the quinoa was still crunchy by the time all the milk cooked off. Sooooo disappointed! This looked amazing!

      Same here, didn’t work out at all. Quinoa is still crunchy, almost uncooked, all the milk is gone and I’m pretty sure it shouldn’t taste the way it does taste.

    A couple of hints – to take away the bitterness, rinse the quinoa under cold water for a few minutes before cooking. The bitterness is actually dust/debris on the shell from harvest. A quick rinse in a metal strainer will take the bitterness away. If you’re having problems cooking with milk on the stove, cook it instead in your crockpot on low overnight. And if you don’t drink animal milk, you can substitute almond, coconut or rice milk.

    My Aunt makes this a lot except to prevent curdling, the quinoa is cooked like normal with water and then in a skillet she cooks some grated ginger and then adds the milk and cooked quinoa and heats until warmed through. Then just top with currants and real maple syrup….or ginger syrup…yum

    I cook mine with coconut milk and add a teaspoon of peanut butter. Top it with crunchy granola and a tasty breakfast that keeps me going all morning!

    Sounds great and I will try it with coconut milk. As a help to those that it didn’t work for I bet they are cooking on an electric stove. I love them, but learned decades ago that you bring liquids to boil on one burner and then move the pan to a second burner to simmer. Doing this will prevent boil over.

    Loved this recipe. As someone mentioned the recipe can be halfed. Still enough for 2 servings. I used almond milk, a bit less brown sugar and added raisins and toasted almond slices.

    I use organic canned coconut milk, a little water, cinnamon, nutmeg, cloves, vanilla bean powder and I pure maple syrup. I love playing with recipes. Thanks for this recipe.
