With Easter only a few days away, I thought I’d share a fun dessert that you can get creative with – the classic Bunny Cake!
Kids love this cake because they can help decorate – and I love this cake because it’s so much easier to get a corner piece. You know I’m all about the icing.
I decided to make mine with cake batter and icing from scratch, but if you’re in a pinch for time, this is also a great recipe you can adapt to do with boxed cake mix and a tub of icing with a little food colouring and some candies. But if you do have the time, I highly recommend trying to make this one from scratch. If you make a mistake, it’s easy to cover it up with icing, so use this as a chance to take a shot at a homemade cake.
For the cake, I decided to try a recipe out of my great grandmother’s Better Homes and Gardens New Cook Book. And by “new” I mean it was printed in 1976.
I love the worn out pages from years of my family making recipes from this. Old cook books like this are great because usually they use real everyday ingredients rather than shortcuts or new health-fads. If I want cake, I want real cake…and I want it to taste like something my grandmothers would make.
What you’ll need:
2/3 cup Butter or Margarine
1 3/4 cups Sugar
2 Eggs
1 1/2 tsp Vanilla
3 cups Sifted Cake Flour
2 1/2 tsp Baking Powder
1 tsp Salt
1 1/4 cups Milk
Preheat the oven to 350°F. Grease two 9″ round cake pans and dust with cake flour.
Cream butter. Add sugar gradually, creaming until light. Add eggs and vanilla and beat until fluffy.
Sift dry ingredients together.
Add to creamed mixture alternately with milk, beating after each addition. Beat 1 minute.
Yum…don’t you just love the smell of cake batter? Its a sign of good things to come.
Pour batter into prepared pans and bake for 30-35 minutes. Cool 10 minutes; remove from pans. Cool.
Now for the fun part – making the Bunny Cake!
Take your completely cooled cakes and on a cutting board, slice them according to the diagram.
Then lay out the pieces like this. The top two pieces are the ears, then the face and on the bottom is the bow tie.
To decorate, I made buttercream icing (using the Wilton’s recipe) and dyed it in various colours. I used candies for eyes, but you can also use licorice for whiskers and shredded coconut for fur on his face. Get creative and have fun!
