Sweet Potato, Sausage and Spinach Hash

For the past week, I have been fighting a nasty cold, that has left me just craving soup every night. But after a few days, even soup got boring. I wanted something nutritious that would give me a bit of staying power while I fight this thing off.

A quick look in the fridge determined that I had everything to make this Sweet Potato, Sausage and Spinach Hash I kept hearing about on Carrots ‘N’ Cake last week.

I was full of some of my seasonal favourites – bright orange sweet potato, sweet local apples and slightly spicy sausage. Having everything all mixed up may not be everyone’s thing, but I loved all the flavours coming together. The leftovers were great for easy dinner when I didn’t feel like cooking this week.

What you’ll need:

  • 2 small to medium Sweet Potatoes, peeled and diced (or one large)
  • 1 Apple, peeled cored and diced
  • 2 tbsp Coconut Oil, divided
  • 1/4 tsp Cinnamon
  • 2 Mild Italian Chicken or Turkey Sausages, removed from casing
  • 2-3 large cups of Baby Spinach
  • 1/3 cup Yellow Onion, diced
  • Salt and Pepper to taste

In a large nonstick skillet heat 1 tbsp coconut oil over medium-high heat.  Add diced sweet potatoes and apples.  Add a pinch or two of sea salt and cinnamon to the pan.  Cook until softened, and slightly browned.

While the sweet potatoes are cooking, heat a large skillet with 1 tbsp coconut oil over medium heat.  Add sausage and onion making sure to break the sausage up in small pieces while it cooks.  

Once the chicken is no longer pink in color and completely cooked add spinach to the skillet. 

The spinach should wilt down within 1 to 2 minutes.  Once spinach is cooked add the sweet potato apple mixture to pan and stir to combine all. 

We both liked this so much, that it is already on the shopping list for next week. Delish!
