The other night I was catching up on some TV and got the biggest craving for something chocolately – cake, brownie, chewy cookie, you name it. But the reality is that I didn’t have the energy for actually making a whole cake or tray of brownies or batch of cookies, and I didn’t exactly need to have that many treats hanging around the house. The temptation would be too great to just eat it all.
All the rich, gooey, decadent chocolate goodness I was craving, but without nearly as much work! It took more time to measure out the ingredients than it did to actually cook this in the microwave.
What you’ll need:
- 4 tbsp flour
- 4 tbsp sugar
- 2 tbsp cocoa Powder
- pinch of salt
- 1/4 tsp vanilla extract
- 2 tbsp coconut oil
- 2 tbsp water
- topping: 1 tsp shredded coconut, 1 tsp mini chocolate chips
Whisk together everything except the toppings in a small bowl with a fork. I prefer to do this rather than use the mug and be struggling to get everything combined really well.
Zap for 60 seconds in the microwave. The center should still be soft and gooey. Give is another 10-20 seconds if needed.
