Friday Favourites – S’more Treats without the Campfire

Happy Friday everyone! Friday afternoons in the summertime are always so exciting because you know you’re going to get the chance to go outside and enjoy the weather.

In yesterday’s camping post, I mentioned that we ate many  s’mores while we were away. I thought I would have gotten it all out of my system then, but I still find myself daydreaming about other ways to incorporate the s’more flavours into other recipes. A little bit of searching online and before I knew it I had a list of recipes that I need to make the next time I have a s’more craving. I’ve compiled some of the best to share with you for this week’s Friday Favourites. Grab your marshmallows, chocolate and graham crackers – it’s time to make S’MORES!

1. S’more Brownies
Brownies are one of my all-time favourite baked goods. I’ve made many different variations before – Irish Cream Brownies, Ooey Gooey Brownies, Pumpkin Brownies, Chocolate Raspberry Brownies, Low-Cal Brownies, Peppermint Pattie Brownies, Chocolate Coconut Brownie Mug Cake, Flourless Black Bean Brownies, Chocolate Covered Peppermint Brownie Bites…in other words, I like brownies alot and I love trying new flavours.

So how is it possible that I’ve never made s’more brownies before?!? A crisp graham cracker crust, fudgy brownie centre topped with toasted marshmallows. Yum!

Or what about this decadent, gourmet version, complete with a toasted marshmallow meringue top. You could easily serve these at a party and get rave reviews from guests.

2. S’more Pie

Jess from How Sweet Eats has done it again with this S’more Pie. Just look at it! Enough said.

3. S’more Cookies

I still love coming home to my parents’ house and finding that my mom has made a big batch of her chocolate chip cookies or oatmeal cookies. The smell of freshly baked cookies makes me think of a big warm hug when you get home. How about a big warm hug stuffed with marshmallows and milk chocolate chunks? These cookies look so fun and are a great alternative for when the weather isn’t nice enough for roasting marshmallows over a fire.

Or if you do have the fire to roast a marshmallow, what about sandwiching it between two of these s’more cookies. Double yum!

4. Ultimate S’more Cake

This thick s’more cake is comprised of seven layers: 2 brownie layers, 2 cheesecake layers, 2 chocolate chip cookie layers, 1 graham cracker layer, marshmallow frosting AND chocolate frosting. Ambitious, but man does it ever look good. Look at how thick the brownie layers are!

5. S’more Ice Cream

If I had seen this recipe before I made my first batch of ice cream in our Cuisinart Ice Cream Maker, I doubt I would have gotten to the Homemade Chocolate Chip Cookie Dough flavour first. You just know that you’re going to get a bit of all the flavours at once with every bite.
