Chicken Snap Pea Skillet

When we have busy weeks like the one coming up, I like to have a couple of easy, fast weeknight meals lined up. Something that I can put together quickly with minimal work, but still fantastic results.

At the end of a long day, there is nothing like having a great flavourful meal that took you less than 30 minutes.

What you’ll need:

  • 8 Boneless Skinless Chicken Thighs
  • 1 tbsp Olive Oil
  • 3 cloves Garlic, thinly sliced
  • 1/3 cup Cider Vinegar
  • 4 tsp Sugar
  • 1/4 tsp Red Pepper Flakes
  • 1/2 lb Snap Peas, washed and ends trimmed
  • 1/2 cup Fresh Basil
  • Salt and Pepper

Trim chicken thighs and season both sides with salt and pepper.

I used these vibrant snap peas from our local farmers market. They are great as a snack, but they are also a nice addition to a dish like this. They provide a slightly sweet taste, some crunchy texture and lots of great nutrients. Wash the snap peas and trim off the ends.

Heat olive oil in a large frying pan over medium-high heat. Add chicken and brown for 5 minutes on each side.

Add garlic, cider vinegar, sugar and red pepper flakes. Bring to a boil. 

Cover and simmer for 5 minutes or until chicken is done. 

Add snap peas, cover and cook for another 5 minutes. Remove from heat, stir in basil and serve.
