Apple Bacon Brie Grilled Cheese

Thank you for all your kind wishes yesterday on this new adventure we’re embarking on. Garrett and I are both really excited about our new home and I’m glad that I’ll get to share it with all of you.

To celebrate last night, we pulled out all the stops on a fun gourmet grilled cheese loaded with fresh green apple, crispy bacon, melted brie cheese and a little apricot jam for sweetness. It was so good, that I knew I wanted to get up today and share it.

It had the perfect compliment of salty and sweet with a little crunch. We could hardly wait to dig in. After a long day, it was nice to have this quick and easy weeknight dinner for a treat.

Makes 2 sandwiches · Printable Version
What you’ll need:

  • 4 slices good bread (fresh sourdough or french bread is best)
  • 6 slices crispy cooked bacon (I used my fool proof oven method while I got all the other ingredients ready)
  • 8 oz brie cheese (about 6 big slices)
  • 1/2 green apple, thinly sliced
  • apricot jam
  • butter

Heat a large skillet over medium-low heat. Butter one side of each piece of bread. Lay half the cheese on the non-buttered side of one slide of bread and layer with half the green apple slices and half the bacon. On another piece of bread, spread apricot jam on one side and butter on the other. Place on top of sandwich, with buttered side up.

Tip: To make the brie easier to slice, place in the freezer for 10 minutes to firm it up before slicing.

Place the sandwich in the skillet and press down firmly with a spatula to help brown the bread and melt the cheese. Cook on one side for about 3 minutes, flip and do the same on the other side.

Cut in half and serve with kettle chips.
