Cinco de Mayo and 100 Miles in May Update!

Who can resist seeing Whiskey in a sombrero?…I know I can’t!
I love Cinco de Mayo and I really wish that more places in Canada celebrated it. Any excuse for good food, fun music and a night with friends works for me 🙂

Last year I made Chicken Enchiladas for a group of friends, but this week has been incredibly busy so I didn’t have time to arrange a dinner date with the gang. Instead, the boyfriend and I are having a little Cinco de Mayo dinner for two (or three if you count Whiskey eating anything I drop on the floor while cooking.) I’m trying out a new recipe with quinoa (fingers crossed it works!) and I’ll be back tomorrow with the a post about it if all goes well!

Anyone else doing anything for Cinco de Mayo? I’d love to hear about it 🙂

We’re only 5 days into the challenge and between all of the participants, we’ve already covered almost 330 miles together! That is great! I’m so pumped that so many people have been enjoying this. Every time I get an email about people going out for walks with their families, taking their bikes to work, training for a half marathon, it motivates me to keep moving myself!

Of course I picked what has seemed like the rainiest week to start the Challenge. I’ve only been able to do 9 miles so far because every run and long walk has been thwarted by big rain storms. But the weekend is looking like it will be mighty sunny, so I’m hoping to fit in plenty of miles then!

And on a final note, I leave you with this video of Cheap Trick doing a version of their 70’s hit “Surrender” with a Mariachi band…I love it!
