As I mentioned earlier this week, we had my parents over this weekend for a birthday dinner for my Dad. I tried getting out of him what kind of cake he would like, but the most he would say to me was that it should be Chocolate or Vanilla. Thanks Dad, thats alot to go by. I decided to take some inspiration from those two flavours and go with a lunchtime favourite – Oreos!
This Oreo Chocolate Fudge Cake was amazing. I made it based on a few recipes that I found online and it turned out great. The cake was super moist and fudgy, while the icing had great vanilla flavour and crunch oreo bits mixed in. I know I’ll be making this again!
What you’ll need:
Cake:
- 2 cups Sugar
- 1-¾ cup Flour
- 1-½ teaspoon Baking Soda
- 1-½ teaspoon Baking Powder
- ¾ teaspoons Salt
- ¾ cups Cocoa Powder
- ½ teaspoons Ground Coffee Beans or 1 tsp Instant Espresso Powder
- 1 cup Milk
- 2 whole Eggs
- ¼ cups Applesauce
- ¼ cups Oil
- 2 teaspoons Vanilla
- 1 cup Boiling Water
Buttercream Icing:
- 1-½ sticks Butter
- 1 cup Shortening
- 4 cups Powdered Sugar
- 1-½ teaspoon Vanilla
- 5 teaspoons Half-and-half Cream
- 10 Oreos, crushed (and a few extra to decorate with)
Preheat oven to 350 °F. Grease 2 round baking pans and sprinkle with flour.
In a large mixing bowl, combine sugar, flour, baking soda, baking powder, salt, cocoa and coffee. Mix and then add in milk, eggs, applesauce, oil and vanilla. Mix well.
Pour in boiling water and stir to combine. Its a very runny batter, but don’t worry, it’ll work!
Pour batter into the prepared baking dishes. Bake for about 30 minutes, until the center is springy.
Remove from the oven and let cool for 10 minutes, then remove to a wire tack and let cool for another 20 minutes.
Meanwhile, prepare your icing. In a mixing bowl, cream the butter and shortening together. Add in powdered sugar, vanilla and cream. Mix until everything is well combined. Add more sugar or cream if needed until you reach the consistency you’d prefer. Stir in crushed Oreos.
Add the top and continue to frost the entire cake. Place extra Oreo cookies on top for decoration. I cut them in half and made a little pattern on the top. You could also use the Mini Oreos to do this.
It turned out absolutely delicious and I think that my Dad was pretty happy with his birthday cake. I even took a few pieces to some people at work and they were over the moon with it. Requests are already coming in for more!
