Last night I opened up the fridge, only to find that we had 4 zucchini in there. Where did they all come from? I tend to buy whatever produce is on sale when I’m at the grocery store and I guess the past few times I’ve been to the store there has been a deal on zucchini. I love Grilled or Roasted Zucchini just as much as the next gal, but you can only make it so many nights in a row. What to do?
Turn that savoury side dish into a sweet treat, like this Whole Wheat Chocolate Chip Zucchini Bread! You can’t taste the zucchini at all and the great thing about quick breads is that they take little effort to make (no kneading, thank-you-very-much) and they are great as breakfast, a snack or dessert.
I like to pretend that the whole wheat flour and zucchini cancel out the sugar and chocolate chips. Right? What the zucchini really does is make the bread extra moist, which is important when using whole wheat flour, which tends to be dry.
What you’ll need:
2 large Eggs
1/3 cup Honey or Molasses
1/3 cup Brown Sugar
1/2 cup Vegetable Oil
1 tsp Vanilla Extract
2 cups Whole Wheat Flour
1 tsp Salt
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Ground Cinnamon
2 cups shredded, unpeeled Zucchini (about 1 medium Zucchini)
1 cup Chocolate Chips or Chunks
Preheat the oven to 350°F; lightly grease a 9″ x 5″ loaf pan.
In a large mixing bowl, beat eggs, honey/molasses, brown sugar, oil and vanilla until smooth. Add the flour, salt, baking powder, baking soda and cinnamon, mixing until well combined. Stir in zucchini and chocolate chips.
Pour batter into the pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool for 10-15 minutes before turning out onto a rack. Cool completely before slicing, or break all the rules and slice open that warm loaf and enjoy all the melty chocolate.
I had hoped to snap some pictures of the whole loaf, but alas this was all that was left when I got to it, except for a couple of end pieces. I love it when I make baked goods and they’re gone fast because it means 1) people liked them and 2) I can’t scarf down the whole loaf myself when I get home, but lets be honest – this piece was gone before I even set the camera down. What can I say….I have a weakness for zucchini chocolate.

I love zucchini and my family does not so the only way I can get them to eat it is in bread. I look forward to summer because we have zucchini bread a lot for breakfast. I am going to try the muffins they sound good
