I don’t have a recipe for this, as it was made by someone else, but I just had to share these pictures because this is one of the prettiest desserts I’ve seen in a long time.
It’s Pavlova. A meringue dessert named after the Russian ballerina Anna Pavlova, on one of her many tours to New Zealand in the 1920s.
The edges of the meringue are made to look like her tutu.
The inside is sometimes filled with a custard, then berries and finally a big dollop of whip cream on each piece as you serve it.
What makes the dessert so light is the meringue that you whip up.
I was lucky enough to stop into my parents’ house just as my mother and sister started making the base.
Then row upon row of piped meringue. My sister is really good with a piping tube!
The finally presentation was a showstopper – especially with all those delicious local berries piled up on top.
