Summertime Cooking (or How Not To Turn on the Oven)

We’re starting into another heatwave this week and all I can think about is – what am I going to cook?

There is NO WAY I am turning on the oven (our little air conditioner can’t keep up!), so I decided to dig up some of my favourite no-cook and BBQ recipes.

My go-to summer breakfast is always a smoothie. That cold and creamy taste in the morning helps keep me cool on my way to work. And the best thing is that if you make them a little less thick, they are an easy on-the-go breakfast.

Cold and Creamy Strawberry Banana Smoothie Bowl or I had a little more milk to make it drinkable.
Mint Chocolate Green Monster Smoothie – One of my favourite flavour combinations!
Hummus Dip – Perfect for packing up some veggies for a picnic in the park.
Tex Mex Quinoa Salad – This summery salad only requires a little bit of stovetop cooking with the quinoa, but everything else is just chopping.
Cucumber Bean Salad – Perfectly cool and crisp.

Dill Bean Salad – Super flavourful and a great way to use up some of those fresh herbs in the garden!

Fresh Corn Salad – I often throw an extra cob or two of corn in the pot just so that I have extras to make this dish.

Mini Caprese Salad – simple flavours, but when they go together they make a delicious Italian-inspired dish.

Puerto Rican Cabbage Salad –  crispy and fresh, with a little bit of kick if you want some.

As you can tell by all the recipe variations that I have, I love chicken skewers. They are an easy way to make super flavourful chicken in convenient bite-size pieces. The flavour combinations are endless, but some of my favourites are Chicken Kebabs, Chili-Lime Chicken Skewers, Chicken Souvlaki or Grilled Lime Chicken with Avocado Salsa.

Use up some of that leftover chicken to make a Cobb Salad.
Italian Turkey Burger – A fun take on your usual turkey burger.

Disappearing Pork Tenderloin – A super flavourful and moist cut of meat. This is so good, that there are NEVER any leftovers.

Texas Dry Rub – a strong and flavourful dry rub that is perfect on a nice big steak.

Use up leftover taco beef in a large batch of BBQ Nachos. Perfect for a big party of people.

Grilled Eggplant with Fresh Herbs – As a vegetarian main or even as a side dish.

Grilled Zucchini – Another way to use up the plethora of zucchini in everyone’s garden right now!

Cool off after a long day with Blackberry Lemon Greek Yogurt Popsicles.
Or take advantage of the kids last burst of energy after dinner and get them to help you shake up a batch of Homemade Ice Cream Without a Machine
