White Chocolate Popcorn

I’ve always been a big fan of those gourmet popcorns you see at the store. They always look so good – full of crunchy salted popcorn, sweet candies and drizzled chocolate. I’ve only ever been able to find one type that was safe for people with peanut and nut allergies, and I’ve never been able to find it since.

The only solution was to learn how to make it myself! I chose to make White Chocolate Popcorn for my first attempt and it turned out just as great as I’d hoped it would. I’m already brainstorming new flavours to try!

This is also a great recipe to do with kids. They can help with all the stirring…and of course they will enjoy the taste testing!

What you’ll need:

  • 2 bags of Microwave Popcorn
  • 2 tbsp Shortening
  • 2 bags of White Chocolate Chips (about 16oz)
  • 1 cup of Smarties or similar candies
  • 1/4 cup Semi-Sweet Chocolate Chips
Pop the bags of microwave popcorn individually and pour into a large bowl.

To remove all the kernels, place a wire baking rack on top of the bowl.

Flip the bowl over, keeping the baking rack attached, and shake over top of a large baking sheet.

All the tooth-breaking kernels will sift out onto the baking sheet. Discard kernels.

Add the white chocolate chips and shortening into a microwave safe bowl. 

Microwave for 30 second intervals, stirring in between, until melted and smooth.

Pour the melted white chocolate over the popcorn and toss with a large spatula until coated.

Add the Smarties and gently stir in.

Line the baking sheet with waxed paper, and spread the popcorn mix out.

Melt the semi-sweet chocolate in a small microwave bowl and drizzle over popcorn. A ziploc bag with the corner cut makes for a great piping bag to get an even drizzle.

Allow to cool completely before breaking up. It will keep in an airtight container at room temperature for several days (if it even lasts that long).

Although it is pretty tempting to steal a couple of pieces while it’s still warm.

I made up a couple of baggies of popcorn to give to family and friends.

And of course kept a few handfuls for ourselves too!
