Spicy Garlic Brown Sugar Chicken

It’s been a busy week so far and there are no signs of it slowing down any time soon. When we get busy like this, it is easy to let things like “eating healthy” fall to the wayside. We try to eat at home as much as we can and it helps to have some easy recipes in my back pocket for those weeknights when I don’t have the time to stand over a stove all night.

Plain baked chicken can be boring and dry, so I like to kick it up a notch with this Spicy Garlic Brown Sugar Chicken. It comes out moist and flavourful with just a little spice. Dinner came together easily with some steamed broccoli and Creamy Scalloped Potatoes.

It also makes great leftovers for a salad. I sliced it up on some mixed greens with balsamic vinaigrette and it turned out great.

What you’ll need:

  • 4-5 chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper
  • salt and pepper

Preheat oven to 450°F. Lightly grease a casserole dish, and place chicken breasts inside. Sprinkle with salt and pepper.

In a small saucepan, saute garlic in oil and butter until tender. Stir in brown sugar, basil, oregano and cayenne.

Pour sauce over the chicken.

Bake for 20-30 minutes or until the juices run clear. The cooking time will depend on the thickness of your chicken.

Serve it up with a side of veggies and some Creamy Scalloped Potatoes.
