Easy Mini Pizza Bites Appetizers

Today is a busy day (working both jobs back to back!), but I wanted to stop in quickly and share this great appetizer idea I did this weekend for a bachelorette party I was helping host.

Using frozen store bought pizzas, I was able to make quick and easy pizza bites in fun flavours, along with a garlic dipping sauce. Normally store bought bite size pizzas are about $5 for 10 pieces, but I was able to find whole size gourmet pizzas on for $2.88 (over half price!) and was able to get 8-9 pieces out of each. With 3 pizzas, I was able to get 25 pieces for less than $9, which was more than enough for the 10 girls at the party.

To start out, I unwrapped all the pizzas and let them sit out 10 minutes to thaw a bit.

Using a biscuit cutter, I cut out 8-9 circles, trying to go around and make the most of it, without getting too much crust on each one. I saved the scraps to bake up as a snack for Garrett later on.

The biscuit cutter I used was actually my great grandmother’s….made from an old soup can. I loved thinking about all the biscuits and goodies that four generations have cut with this now.

If you wanted to get festive, you could take a spinach and cheese pizza like this, bake it and then add a few cherry tomatoes to make a Christmas Pizza Wreath! Maybe even add a red pepper bow 🙂

Back to the bites, I arranged all three flavours on a baking sheet – Bruschetta, Spinach and Goat Cheese with Veggies – and baked them according to the original packaging, maybe just slightly less time though.

 They turned out to be a great hit and I’m sure I’ll be making them again!

 As for our bachelorette party, everyone had a great night celebrating! 

 The bride was all decked out in her bachelorette finest.

 and we even took an SUV limo to our final bar destination.

Nothing like spending a Saturday night with some of my favourite ladies!
Now its only four days left until the wedding…and I still don’t have shoes! Eek!
