BBQ Chicken Pizza

In last week’s Best Pizza Dough recipe, I mentioned that I was going to share our new favourite – BBQ Chicken Pizza! When I started making homemade pizzas this year, I knew this was going to be one of the first ones we’d try.

There is a pizza place near our house that makes a BBQ Chicken pizza, but while Garrett loves it, I’ve never been a fan. Then I made this recipe for him on a Friday “Take-In” night and I completely changed my mind. The sweet/smokey BBQ sauce paired with the cilantro is a great flavour combination. Garrett even said it tastes better than the pizza place’s recipe. Just what I like to hear!

BBQ Chicken Pizza

Preheat the oven to 450°F. Using a flour dusted rolling pin, roll the dough out as thin as you would like. I always use our pizza stone when cooking pizza, so I just roll it out right on the stone.

Spread the BBQ sauce evenly around your pizza.

Sprinkle with the mozzarella and cheddar cheese, then top with the cooked chicken and sliced onion. Bake for 14-16 minutes.

I like to leave mine in a little longer to make it well done.

Top the hot pizza with the fresh cilantro.

Slice it up and serve! This makes great leftovers too, just store them in a sealed container in the fridge.

Serves: 14" pizza
Ingredients
  • ½ recipe of the Best Pizza Dough
  • ⅓ to ½ cup of your favourite BBQ sauce
  • 1 cup cooked chicken breast (great use for leftover chicken!)
  • ⅔ cup shredded mozzarella cheese
  • ⅔ cup shredded cheddar cheese
  • ½ small red onion, thinly sliced (I used a white onion this time and was good too)
  • handful of fresh cilantro, chopped
Instructions
